- 1 cup oats (rolled or quick)
- 1 tbsp oil
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 1 onion (finely chopped)
- 1 green chilli (chopped)
- 1 carrot (finely chopped)
- ¼ cup green peas
- 6–8 curry leaves
- ¼ tsp turmeric powder
- Salt to taste
- 2 cups water
- 1 tbsp lemon juice
- Fresh coriander leaves
Step-by-Step Recipe
Step 1: Dry roast the oats
Heat a pan on low flame. Add oats and dry roast for 2–3 minutes until lightly crisp. Do not burn them. Keep aside.
Step 2: Prepare the tempering
Heat oil in the same pan. Add mustard seeds and let them crackle. Add cumin seeds and curry leaves.
Step 3: Sauté vegetables
Add chopped onion and green chilli. Sauté until the onion turns light golden. Add carrot and green peas and cook for 2–3 minutes.
Step 4: Add spices and water
Add turmeric powder and salt. Pour in 2 cups of water and bring it to a boil.

Lower the flame and add roasted oats. Mix well to avoid lumps. Cook for 2–3 minutes until the oats absorb water and become soft.
Step 6: Finish and serve
Turn off the heat. Add lemon juice and mix well. Garnish with fresh coriander leaves. Serve hot.
